A summer salad blending grilled peaches with creamy burrata, fresh arugula, and tangy balsamic. Ready in 15 minutes, this vibrant dish showcases seasonal flavors with a smoky-sweet balance. Optional protein additions make it hearty yet light.

Ingredients

Scale

4 ripe peaches, sliced
1/2 cup cherry tomatoes, halved
1 ball fresh burrata cheese
3 oz arugula
1/4 cup balsamic glaze (non-alcoholic)
1 tbsp olive oil
1 clove garlic, minced
Salt & pepper to taste
Basil leaves, for garnish
1/2 cucumber, thinly sliced (optional)

Instructions

Prep veggies: Slice peaches and toss with olive oil, garlic, salt, and pepper. Heat grill to medium-high.
Grill peaches: Place peach slices on the grill cut-side down. Cook 2-3 minutes until caramelized, then flip and cook another 2 minutes.
Assemble salad: Arrange arugula on plates. Top with grilled peaches, cherry tomatoes, and sliced cucumber (if using).
Add burrata: Tear burrata atop the veggies. Drizzle with balsamic glaze and sprinkle fresh basil.
Option to add protein: For heartiness, add scrambled egg whites or grilled chicken strips.

Notes

Storage hack: Keep grilled peaches in an airtight container for up to 2 days. Dress salad just before serving.
Swap balsamic: Try apricot jam or honey-sweetened glaze for non-alcoholic options.
Prep ahead: Marinate peaches 30 minutes before grilling for deeper flavor.
Add smoked chicken strips for extra protein.
Use feta cheese for a tangy twist.
Sprinkle toasted walnuts for crunch.
