A hydrating summer sip blending watermelon’s natural sweetness with zesty lemon juice. Poured over ice and garnished with mint, it’s perfect for backyard gatherings or a refreshing cooldown.
8 cups seedless watermelon, cubed (about 3 lb)
1 cup freshly squeezed lemon juice (about 6–8 lemons)
1/2 cup granulated sugar, to taste
2 cups cold water
1 cup ice, plus more for serving
Pinch of fine sea salt (optional, enhances flavor)
Fresh mint sprigs, lemon slices, and watermelon wedges for garnish
Trim rind and dice watermelon into 1-inch cubes; measure 8 cups.
Blend on high for 45–60 seconds until smooth and foamy.
Strain through a fine-mesh strainer into a pitcher, pressing until pulp is nearly dry (about 4 cups juice).
Juice lemons to yield 1 cup; strain out seeds/pulp.
In a bowl, whisk sugar into lemon juice for 1–2 minutes until dissolved.
Pour lemon-sugar mixture into pitcher with watermelon juice. Add 2 cups cold water and a pinch of salt. Stir for 15–20 seconds until slightly frothy.
Add 1 cup ice and stir. Taste and adjust sweetness/water as desired.
Adjust sweetness to preference; add water for a lighter sip or sugar for a sweeter version.
Use a hand blender for faster pureeing; strain pulp thoroughly for smoother texture.
Chill pitcher and glasses in advance for an extra refreshing drink.
