4 boneless, skinless chicken breasts
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
3 garlic cloves, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon dried parsley
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
2 tablespoons chopped fresh parsley, for garnish
Lemon slices, for serving

Instructions

Pat the chicken breasts dry with paper towels
If the chicken breasts are very thick, carefully slice them horizontally or pound them to an even thickness
In a small bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, parsley, salt, black pepper, and paprika
Rub the lemon herb mixture all over both sides of the chicken breasts
Let them sit for 5 minutes while the skillet heats up
Place a large skillet over medium heat
Once hot, add the chicken breasts in a single layer
Cook for 6 to 7 minutes without moving the chicken until golden and the pan releases easily
Flip using tongs and cook for another 6 to 7 minutes or until the internal temperature reaches 165°F (74°C)
Remove from the skillet and garnish with fresh parsley before serving

For extra flavor, let the chicken breasts rest with the seasoning mixture for up to 15 minutes before cooking
Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C)
