1 1/2 pounds boneless, skinless chicken thighs or breasts, cut into bite-size pieces
1/3 cup honey
1/4 cup low-sodium soy sauce
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons ketchup
1 tablespoon rice vinegar or fresh lemon juice
1 tablespoon cornstarch
2 tablespoons water
2 tablespoons olive oil
1/2 teaspoon black pepper
1/4 teaspoon salt
2 green onions, thinly sliced
1 teaspoon sesame seeds (optional)
Cooked rice (for serving)
Steamed broccoli or green beans (optional, for serving)

Instructions

Pat chicken pieces dry and season with salt and black pepper.
In a bowl, whisk together honey, soy sauce, garlic, ginger, ketchup, and rice vinegar.
In a second bowl, mix cornstarch and water to form a slurry.
Heat olive oil in a skillet over medium-high heat. Cook chicken 3-4 minutes per side until golden.
Lower heat and stir the honey-garlic sauce into the skillet to coat chicken.
Pour the cornstarch slurry into the sauce and simmer 2-3 minutes until thickened.
Garnish with sliced green onions and sesame seeds before serving with rice or steamed vegetables.

Notes

Use a non-stick skillet for easy cleanup.
For extra tang, substitute lemon juice for rice vinegar.
Thicken the sauce gradually by adding the cornstarch slurry in 1 tablespoon increments.
