A vibrant, herb-infused Chicken Gyro Bowl under an hour! Packed with tender chicken, tangy tzatziki, crisp veggies, and pita chips. Perfect for quick weeknight dinners or meal prepping.

1 lb boneless, skinless chicken thighs
2 tbsp gyro seasoning
1 cup plain Greek yogurt
1/4 cup finely diced cucumber
2 medium tomatoes, halved
1/4 red onion, thinly sliced
1 cup spinach or romaine lettuce
1/4 cup chopped fresh parsley
1/4 cup pita chips or crumbled tortilla strips
1 tbsp lemon juice

Instructions

Season chicken thighs with gyro seasoning. Heat skillet over medium-high heat, cook chicken 6-7 minutes per side until 165°F. Let rest 5 minutes, then slice.
While cooking, dice cucumber, slice onion, and chop parsley. Toss spinach in a bowl.
Whip tzatziki by mixing Greek yogurt, cucumber, lemon juice, and salt. Taste and adjust seasoning.
Layer bowls with greens, veggies, chicken strips, tzatziki drizzle, parsley, and pita chips. Add chili flakes for heat if desired.

Notes

Refrigerate chicken and tzatziki separately up to 3 days. Swap chicken with beef or venison. Use soy-based tzatziki for vegan. Add garlic for bold flavor. Marinate chicken in 1 tbsp olive oil for juicier results.
