1 1/2 pounds large shrimp, peeled and deveived
3 tablespoons unsalted butter
1 tablespoon olive oil
5 garlic cloves, finely minced
1 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes (optional)
1 cup low-sodium vegetable broth
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
2 cups cooked white or brown rice
1 1/2 cups broccoli florets
1 cup cherry tomatoes, halved
2 tablespoons chopped fresh parsley
Lemon wedges, for serving

Instructions

Pat shrimp dry and season with paprika, onion powder, salt, pepper, and optional red pepper flakes
Slice cherry tomatoes in half and cut broccoli into small florets
Heat 1 tbsp butter and 1 tbsp olive oil in a skillet over medium-high heat
Cook shrimp in a single layer for 2 minutes per side until opaque, then transfer to a plate
Add remaining 2 tbsp butter to the skillet, sauté garlic 30 seconds
Pour in vegetable broth, lemon juice, and zest, creating a sauce
Add broccoli and cherry tomatoes, cooking 3-4 minutes until tender
Blend in cooked shrimp back into the pan
