2 tablespoons unsalted butter
1 tablespoon olive oil
2 large yellow onions, thinly sliced
3 cloves garlic, minced
1 cup long-grain white rice, uncooked
2 1/4 cups low-sodium beef broth or chicken broth
1 teaspoon onion powder
1/2 teaspoon dried thyme
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper
1/3 cup heavy cream
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley, for garnish

Instructions

Slice the onions into even strips.
Heat butter and olive oil in a skillet over medium heat. Cook onions for 18-22 minutes until golden and caramelized.
Add garlic and cook for 1 minute.
Stir in rice to toast for 1-2 minutes.
Add broth, onion powder, thyme, salt, and pepper. Simmer for 16-18 minutes with lid on.
Reduce heat after simmering. Add heavy cream, mozzarella, and Parmesan. Stir until cheeses are melted and creamy.
Cover and let rest for 5 minutes. Garnish with parsley before serving.

Notes

Use chicken broth for a lighter flavor profile.
For a dairy-free version, substitute coconut cream for heavy cream and vegan cheese.
