4 boneless, skinless chicken breasts (6 oz each)
1 tsp kosher salt
1/2 tsp black pepper
1 tsp garlic powder
1 tsp smoked paprika
1/2 cup all-purpose flour
2 large eggs
2 tbsp milk
1 1/2 cups panko breadcrumbs
1/3 cup grated Parmesan cheese
2 tbsp olive oil
4 thin slices smoked chicken
4 slices Swiss-style or provolone cheese
1/2 cup mayonnaise
1/4 cup sour cream or plain Greek yogurt
2 tbsp honey
1 tbsp yellow mustard
1 tsp fresh lemon juice
1/4 tsp garlic powder
1 pinch kosher salt

Instructions

Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper or place a wire rack on top for crispiness.
Place each chicken breast between parchment paper and gently pound to 1/2-inch thickness.
Season both sides with salt, pepper, garlic powder, and smoked paprika.
Set up breading station: Flour in one bowl, egg-milk mixture in a second bowl, and panko-Parmesan mix in a third bowl.
Dredge chicken in flour, dip in egg mixture, then press into panko-breadcrumbs.
Heat oil in a skillet. Cook chicken in batches until golden, 2-3 minutes per side. Top each with a slice of cheese and a smoked chicken slice. Transfer to the baking sheet and bake 8-10 minutes until cheese melts.
For the sauce: Whisk mayonnaise, sour cream/yogurt, honey, mustard, lemon juice, garlic powder, and salt in a bowl.
Serve chicken warm with dipping sauce on the side.
