A refreshing, zero-alcohol summer mocktail with juicy watermelon, tangy lime, and a hint of mint. Perfect for poolside sipping or backyard gatherings with optional savory twists. Budget-friendly and Instagram-ready!
2 cups cubed watermelon (seedless)
1/2 cup fresh lime juice (about 3 limes)
1/4 cup agave syrup or honey
1/2 cup sparkling water or soda
1/4 cup fresh mint leaves (or basil)
1/4 cup sliced cucumber
1/4 cup crumbled feta cheese (optional)
1/4 cup chopped fresh parsley (for garnish)
Ice cubes
Dice watermelon into small cubes and place in a large mixing bowl.
Add lime juice, agave syrup, and cucumber slices. Toss gently.
Muddle mint leaves in a separate bowl (use a muddler if available).
Chill the mixture in the fridge for 10-15 minutes while the mint infuses.
Blend the chilled watermelon mixture until smooth; strain through a sieve for a silky texture.
Fill glasses with ice, pour the blend, and top with sparkling water.
Add a sprig of mint, feta cheese (if using), and parsley as garnish.
Leftover mocktail can be stored in airtight containers for up to 2 days. For dietary adjustments, substitute feta with a halal-certified cheese if needed. Replace watermelon with strawberries or cantaloupe for seasonal variations.
